Introduction

Couldn't find a recipe that fit what I had in the house, so just made this up when someone gave me a bunch of lemons Couldn't find a recipe that fit what I had in the house, so just made this up when someone gave me a bunch of lemons

Ingredients

    Pillsbury Low Sugar Cupcake Mix
    1/2 Cup Applesauce
    1/4 cup lemon juice
    2 eggs
    6 oz Dannon Light and Fit Lemon Yogurt
    Optional glaze for top can be made by
    mixing 1 tlbs grated lemon rind, with 3/4 cup sugar and 1/4 cup lemon juice, but this has not been calculated into the recipe. ( I got this glaze from the Lemon Tea Cookies submitted by "Spark People User Feycolleen, as I had extra after making the cookies, so used it on the muffins- 1 batch glazed 48 cookies and 36 muffins, so shouldn't add more than 7-9 calories)

Directions

mix all ingredients, spoon in to mini muffin pans and bake at 350 degrees for 15-20 minutes. Brush on glaze if desired.
