Sassy Steak with Noodles

Introduction

Number of Servings: 4

Ingredients

    1 lb. round steak (or whatever cut of beef you have available--we often use cube steak or stew meat.)
    1 clove garlic, minced
    1 tsp. cajun seasoning (I use extra put into tomatoes before thickening.)
    1 can diced tomatoes, undrained
    1 green pepper, cut into chunks
    1 Tbsp. cornstarch
    3 Tbsp. water.
    2 cups hot noodles


Directions

Yield: 4 servings (½ cup noodles, 4 oz. beef, 3/4 cup tomatoes.)

Spray a nonstick skillet with cooking spray.

Sprinkle beef with 1 teaspoon cajun seasoning. Brown until no longer pink.

Add garlic, saute until fragrant (about 30 seconds).

Add tomatoes, green pepper and any additional cajun seasoning (I use about another teaspoon here.). Simmer on stove top for about 10 minutes.

Remove meat from pan, keep warm.

Mix cornstarch and water. Add to tomato mixture, cook over medium high heat until boiling and thickened. Return steak to pan. Simmer another minute or so.

Serve over hot noodles.
