Spinach & Pine Nut Salad w/ Truffle Oil Dressing

Introduction

A gourmet yummy salad that's easy to put together. Impress your guests! It's the truffle oil that makes it special. A gourmet yummy salad that's easy to put together. Impress your guests! It's the truffle oil that makes it special.
Number of Servings: 10

Ingredients

    12 cups fresh Spinach (or two 6oz bags)
    3/4 cup Parmesan Cheese, Shaved (Trader Joe's)
    3/4 cup pine nuts
    4 tbsp Black Truffle Oil
    1 tbsp lemon juice
    1/8 tsp of crushed garlic (in jar)
    Black pepper to taste.

Directions

Layer the first three ingredients in a large bowl. Separately combine the rest of the ingredients for the Truffle Oil Dressing, stir or shake thoroughly. Pour dressing on salad and toss well just before serving so that spinach does not wilt overly.
Makes approx. ten 1 1/2 cup servings.

  • I do something very similar, but add a cup of lentils, cooked in vegetable broth, and a cup of orzo
    I think that takes the calories up to 250 per serving, but my vegetarian son eats it as a whole meal - 6/5/09
