Introduction

Makes 8 cups of potato salad and a suggested serving size is 1/2 cup. Makes 8 cups of potato salad and a suggested serving size is 1/2 cup.
Number of Servings: 16

Ingredients

    15 small potatoes cooked and diced
    12 eggs hard boiled and diced
    1 onion diced
    1 medium pickle diced
    1/4 carrot shredded to add color (optional)
    1/2 cup thinly sliced celery
    6tbsp non-fat salad dressing
    1tsp mustard
    1 tsp lime juice (optional use 1 tsp pickle juice if salt not a problem)
    pepper to taste

Directions

Mix cooked and diced ingredients that have been cooled. In separate bowl mix miracle whip, mustard and lime juice; add to cooked and to cooled ingredients. Serve after it's been refrigerated for several hours for best results. Makes 8 cups (approximately, depending on size of potatoes) and suggested serving size is 1/2 cup.
