Introduction

Number of Servings: 24

Ingredients

    FILLING

    500 grams pitted dates
    2 tbsp honey
    1 1/2 cups water
    1 tbsp lemon juice
    1 tsp lemon rind

    BASE & TOPPING

    1/2 cup olive oil spread, or olive oil
    3/4 cup unsweetened applesauce
    3 tbsp honey
    1 cup whole wheat flour
    1 cup oats
    1/4 tsp baking soda

Directions

Preheat oven to 350 degrees. Spray a 9" square pan with non-stick spray.
Combine filling ingredients in a saucepan. Boil, then reduce heat and simmer for about 10 minutes; until thick. Mash dates with a potato masher.
In a bowl combine the base and topping ingredients. Place 2/3 of mixture in baking pan. Spread out. Pour date mixture in. Smooth out. Top with remaining oat mixture. Spread as good as you can...
Bake fopr about 25 minutes.

Makes 24 squares.
