Ingredients

    1 15oz can Bush's Black Beans, drained and rinsed
    1 11oz can Green Giant White Shoepeg Corn, drained
    1 c. chopped green pepper
    1 med. Vidalia onion, chopped
    1 TBSP olive oil
    1 tsp. cumin
    3 TBSP lime juice
    1/8 tsp. red pepper flakes
    Splash of hot sauce

Directions

In medium skillet, saute onion, garlic, and pepper until tender. Add remaining ingredients and heat through. Serves 6.

Can be served warm with shredded cheese and lite sour cream, or cold as a salad.

  • Yum. The funny thing is I recently had something very similar to this in Delhi, India. Served from a street cart, and eaten out of a paper cup with a little spoon. - 4/4/10
