Another Chicken Stir Fry

Number of Servings: 2

Ingredients

    6 ounces chicken breast in thin stirps
    2 cups snow peas
    1/2 cup sliced carrots
    1 can (8 oz.) Polar sliced water chestnuts
    1 cup low sodium chicken broth
    1 Tble. lite soy sauce
    1 Tble. cornstarch
    2 tsp. vegetable oil

Directions

Heat one teaspoon of the oil in skillet. Add the chicken and sauté until no longer pink. Remove chicken and add the other teaspoon of oil to skillet, add the vegetables, and stir fry a few minutes to crisp tender. Return the chicken to the skillet with the chicken broth, reduce heat to simmer, cover, and simmer five minutes.
Mix together the soy sauce and cornstarch. Just before serving, add to skillet, stirring to coat and thicken.
Makes two servings. Serve over rice or noodles.
