Introduction

This is an excellent recipe that meets several dietary needs. It is gluten free, low fat, low carb and low calorie. I nicknamed it "Church Chicken" because I made it (by request) for all our socials. It has always been a great success. I use my electric roaster so the dish can be plugged in at the social to keep it warm. This is an excellent recipe that meets several dietary needs. Ingredients

    2 pounds skinned chicken legs
    1/4 cup orange juice
    1/4 cup liquid honey
    2 cups medium hot salsa
    1 tblsp corn starch
    1 tblsp dijon mustard

Directions

Preheat oven to 350 degrees. Skin chicken legs and place in roaster. Bake covered for 30 minutes. Meanwhile, mix all other ingredients together in a pot and simmer on stove until sauce starts to thicken. Remove chicken from the oven and pour sauce over all the legs. Cover and cook for 1 1/2 hours. You can lower the temperature if you want to serve them later. I have dropped the tempurature to 300 and left them in the oven for more than 3 hours. The meat falls off the bones.

Served over rice or as a side - they are a hit at any gathering - large or small.
