David's Lentil Soup

Ingredients

    2 T. olive oil
    1 generous tsp. ground coriander
    generous grinding of black pepper
    3"-4" diameter onion, chopped finely
    4-6 cloves garlic, diced
    4 carrots, sliced
    1/2-2/3 bunch of celery, sliced from leaf end
    1 qt. canned tomatoes w/liquid
    1 qt. organic vegetable broth
    1-1/2 cup sorted, rinsed lentils

Directions

Heat olive oil in 5-6 qt. Dutch oven. Sizzle coriander and pepper until aromatic. Add fresh vegetables and "sweat" until onions and celery start to soften. Add tomatoes, broth, and lentils. Stir and cook 30-45 minutes until vegetables and lentils are done. Makes about 8 1-cup servings.
