Spicy Chicken

Introduction

This has a little bite, but is not blow-your-head-off hot. This has a little bite, but is not blow-your-head-off hot.
Number of Servings: 4

Ingredients

    1 tsp vegetable oil
    3/4 cup raw Onions, chopped (approx 2 med)
    1/2 tsp minced fresh Gingerroot
    2 lbs boneless, skinless Chicken Breast, cut into bite size chunks
    1 clove Garlic, minced
    2-3 tbsp Splenda
    2 tbsp Soy Sauce
    2 tbsp Franks Hot Sauce
    1/4 cup Water
    1 tbsp Cornstarch
    1/8 cup Sliced Almonds

Directions

1. Stir Fry onion and garlic and gingerroot in vegetable oil. Remove from pan.
2. Stir fry chicken, when almost done, add back in onion, garlic and gingerroot.
3. For sauce, mix together splenda, soy and Franks.
4. Make a roux of the water and cornstarch, mix in with rest of sauce.
5. Add sauce to pan, cook and stir till thickened.
6. Mix in almonds and serve.
