Hearty Mexican Soup

Introduction

Great Hearty Soup! If mostly no salt added veggies are used, this makes a low sodium soup.

This recipe freezes very well. Divide out into servings, freeze, and have a meal ready!

Number of Servings: 20

Ingredients

    2 lbs 95% lean Ground Beef, browned, rinsed, yeilds aprox. 25 oz. cooked
    2 14.5 oz cans French Cut Green Beans
    3 14.5 oz cans Diced Tomatoes
    1 15.25 oz can Corn
    2 10 oz cans Rotel Tomatoes
    1 cup Salsa
    2 cans of Black Beans, Low Sodium
    3 tbsp Zadie's Mexican Seasoning

Directions

Add cooked ground beef and all canned vegetables, beans, and cabbage to a large pan. Do NOT drain can vegetables, add liquid to soup. Add seasoning. Zadie's is used since it is a great low sodium seasoning. Other seasoning can be substituted.

Simmer over medium heat for about 30 minutes. It can cook longer if desired, as it will not matter.

If you like a hotter, spicier taste. Add some Tabasco Sauce.

This soup makes a large pot, aprox 16 cups. Each serving is about 145 calories.
