4 oz whole wheat lasagna noodles
16 oz part-skim ricotta cheese
1 cup part-skim mozzarella cheese
1/3 cup grated Parmesan cheese
10 oz chopped frozen spinach
1 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp dried basil
1/8 tsp black pepper
16 oz spaghetti sauce
Boil noodles for 8 - 10 minutes (very al dente).
Mix ricotta, spinach, egg, and spices together (and 1/2 tsp salt).
Lightly spray 8x8 (or 9x9) pan with cooking spray.
Make 3 Layers: noodles, 1/3 mixture, 1/3 mozz cheese, 1/3 parmesan, 1 c. sauce in each layer.
Bake covered in foil for 1 hour, remove foil for last 15 minutes.
Let stand 15 min before serving.
