Pancakes

Introduction

I used my old recipe and eliminated an egg and replaced the oil with applesauce and my family still loved it. I used my old recipe and eliminated an egg and replaced the oil with applesauce and my family still loved it.
Number of Servings: 16

Ingredients

    3 cups white flour
    4 tsp. sugar
    2 T baking powder
    1/2 tsp. salt
    2 eggs
    2 1/2 cups milk, 1 %
    5 T applesauce, unsweetened
    1 tsp. vanilla flavoring

Directions

Mix together dry ingredients in a large bowl. Lightly beat eggs in medium bowl with a fork. Add remaining liquid ingredients and applesauce to eggs, mix well and pour into flour mixture. Mix well.
Preheat electric skillet to 400 degrees. Spray skillet lightly with pan spray and pour batter onto skillet. 1/3 cup of batter per pancake. Using the bottom of measuring cup or a spoon, smooth batter into a 5 or 6" circle. When bubbles start popping to the surface turn pancake over and cook until lightly brown.
Serve with light syrup, jam, fruit or your choice of toppings.
Cooking times will vary depending on how many you are cooking and how big your skillet is.
Makes 16 pancakes.
