Low Fat Cream of Mushroom Soup

Introduction

This is simple & way better than any canned variety! Takes about 20 minutes, start to finish. This is simple & way better than any canned variety! Takes about 20 minutes, start to finish.
Number of Servings: 4

Ingredients

    1 pound mushrooms
    .5 Tbsp margarine
    1/2 tsp salt
    1 cup evaporated skim milk
    1 can (14.5 oz) chicken broth

Directions

Heat margarine in saucepan & slice mushrooms, adding to pan as you slice. Saute about 10 minutes, until golden brown. Add flour and salt, cook until thickened, about 1 minute. Slowly add skim milk & broth. Heat through and serve.

You could increase margarine for sauteeing. Original recipe called for 1/4 cup, I thought that was excessive. (And whipping cream, yikes!)
