Minestrone soup

Introduction

This is an easy and delicious soup served great with a salad and warm bread This is an easy and delicious soup served great with a salad and warm bread
Number of Servings: 8

Ingredients

    2 cups chicken broth
    2 cups beef broth
    1 can kidney beans
    1 can crushed tomatoes
    2 carrots
    1 large potato
    onion
    1 cup frozen peas
    1 pkg frozen spinach
    1 tsp garlic
    1 tbsp parsely
    1 tsp oregano
    1/2 tsp margaram
    1/2 tsp basil

Directions

Slice carrots, 1 slice of onion and dice potato.
Throw in crockpot, along with broth, kidney beans and tomoto. Add seasonings. Heat on low for 8 hours, near the end add thawed and drained spinach and frozen peas.

  • I'm going to swap out the broth for Trader Joe's low sodium vegetable broth. That should bring the sodium down to tolerable levels. That and using non-canned kidney beans. - 5/31/09
