2 boneless, skinless chicken breasts (1 whole breast)
1 cup apple, peeled and diced
1 cup celery, diced
1 tbsp shallot, minced
2 tsp fresh tarragon, chopped
1/2 cup Nasoya sandwich spread
1 tbsp curry powder
Allow breasts to cool to room temperature, then cut into small dice.
Add curry powder to Nasoya spread and mix well, allowing to sit for a few minutes for the curry powder to be absorbed.
Chop apple, celery, shallot, tarragon and mix together. Add diced chicken, curried Nasoya, and stir well.
Serve over lettuce leaves or on bread.
