Fresh Strawberry Pie

This was a summer staple growing up and a favorite among all of my family and friends. Mom was known for her strawberry pie. Use a healthier crust and you've got an even better dessert. This was a summer staple growing up and a favorite among all of my family and friends. Mom was known for her strawberry pie. Use a healthier crust and you've got an even better dessert.
Number of Servings: 8

Ingredients

    Prepared pie crust (bottom only)
    1 C. sugar
    1 C. water
    1/4 c. cornstarch
    1 Tbsp. butter
    1 Tbsp. lemon juice
    red food coloring
    2 C. strawberries

Directions

Combine sugar, water, and cornstarch in a pan over medium heat until thick, stirring constantly. Remove from heat and add butter, lemon juice and food coloring. Put in fridge to cool slightly. Wash, hull and half strawberries. Add to sugar mixture. Put in pie crusts and place in fridge until set up (approx. 3-4 hours). Top with whipping cream or cool whip if desired. Best eaten day of. (My mom makes it mid-morning for dinner that evening.)
