This was a great recipe. I added a little Italian seasoning to the mix and it made the flavor even better! My 4 year old daughter who normally turns up her nose at anything new or healthy kept saying she LOVED this meal. Will definately add to my rotation! - 7/13/09

  • This recipe was great! It will be made again very soon. Loved the fact that not a single ingredient was reduced or low fat just portion control! Awesome! Had to eat a serving of chicken with it for added protein to help balance out the carbs from the pasta since I am diabetic. - 6/20/12

I thought this was pretty good to satisfy a pasta craving, but hubby wasn't too crazy about it, as he is not an eggplant fan. I might experiment using regular pasta sauce rather than the creamy alfredo and maybe substituting mushroom for the eggplant, and consider some turkey sausage. - 11/3/10
