Zucchini Tomato melt

Introduction

Okay, sorry to say that this never had a name that I knew of, so this is what I came up with. My boyfriend thinks that this would be best on some pasta but I like to think of it as a crustless pizza. Eat as is or add pasta, rice, or some kind of bread and make it a meal. The nutritional information is based on 6 servings but it depends on what else I am eating as to how much of this I eat. Ingredients

    4 med. zucchini squash, sliced
    1 1/2 cups mushrooms, sliced
    1 med onion, chopped
    1 6-oz can tomato paste
    1 cup (4 oz) Italian blend shredded cheese, divided
    1/4 tsp oregano
    1/4 tsp basil
    1 clove garlic, minced

Directions

Saute zucchini, mushrooms, onions and garlic in the butter until crisp tender. Add tomato paste and seasoning and stir until well combined. Add 1/3 of the cheese and stir until combined and cheese is melted. Top with the rest of the cheese and cook under broiler until cheese is melted and bubbly (I like the cheese browned a little more than other people, so pull it out when you think the cheese looks good to you)
