Introduction

This is great to have around as a quick meal or a side dish. It helps a lot when struggling to get those veggies in. This is great to have around as a quick meal or a side dish. It helps a lot when struggling to get those veggies in.
Number of Servings: 8

Ingredients

    1 tbsp Smart Balance Buttery Spread (or margarine of your choice - or olive oil)
    2 Large Onions
    1 large pepper (green, red, or yellow)
    1 cups chopped Carrots
    2 med - lg Zucchini Squash
    2 med - lg Yellow Summer Squash
    1 can diced tomatoes
    1 can chicken broth, (or 1 chicken bouillon cube with 2 cups water: watch the sodium)
    1/4 tsp. Cayenne Pepper
    1 tbsp Course Ground Black Pepper
    1 - 1 1/2 tbsp each Mrs. Dash Onion and Herbs and Garlic and Herbs (or herbal seasoning of your choice)

Directions

I chop as I go in order given. Sauté onion and bell pepper in buttery spread, adding each vegetable as you get it chopped, stirring together well. Add remaining ingredients and simmer on medium until veggies are just tender.

This recipe is the way I made it tonight. You can also throw in chopped cabbage, broccoli, or a sundry of other favored veggies. Just have fun with it. A dash or two of Worcestershire Sauce or a little Cooking Sherry adds to the flavor--adjust nutritional info accordingly.

It is a rainbow of flavors. Bon apatite!
