Wilted Romaine Salad

Introduction

This salad is great as a meal adding grilled chicken breast. It is filling, tasty, and great for summer. You could just as easily top it with halibut, or substitue egg white only in the dressing for lower cholesterol. Substitute olive oil for bacon drippings to reduce fat & calories.

Ingredients

    1/2 head Romaine Lettuce
    1/2 onion, thinly sliced
    1 clove garlic
    1 can Mandarin Oranges - chilled
    1/3 C Feta Cheese - crumbled (or parmesean)
    1/4 C Slivered Almonds
    4 Slices Bacon - cooked & crumbled
    Reserve bacon drippings
    3 Tbsp Red wine or Balsamic Vinegar
    juice of 1/2 lemon
    1 tsp honey
    2 Tbsp granulated Sugar
    1 Egg - whipped

Directions

Cut bacon into bite sized bits & brown. Drain & reserve drippings. Wash lettuce and drain. Tear into bite size portions & place in large salad bowl. In same pan as bacon, saute onion with garlic. Place hot onions on salad greens, and top with bacon and almonds. In small sauce pan, mix together sugar, vinegar, honey, lemon juice, bacon drippings, salt & pepper to taste. Temper egg into dressing, whisk. Heat sauce over medium heat, whisking continually, until sauce begins to thicken. When heated, but not boiling, drizzle over lettuce. Toss to coat. Top with mandarin oranges, feta cheese and slivered almonds. Serve immediately.

  • Just started the HcG Protocol so I modified this recipe to fit my needs. I used 100 grams of shrimp (approx. 10 cooked) and put them in a teflon skillet with onion powder, garlic powder, salt and Old Bay. I then put in a cup and a half of shredded romaine lettuce and let it wilt. It was pretty good - 11/29/10
