Pasta with Cannellini Beans and Escarole


Very, Very good for you and filling. Very, Very good for you and filling.
Number of Servings: 8


    1/2C olive oil, 1 16 Oz. package penne pasta, 1 head escarole, chopped, 1 15.5 Oz. can cannellini beans with liquid, 1 14.5 Oz. can diced tomatoes, 4-5 cloves of garlic. (I love garlic so it's 5 for me), salt & pepper to taste.


Put water in pot and cook pasta according to directions. Meanwhile,put oil in pan and add chopped garlic. Keep an eye on this because it could burn quick. Once you see bubbles from the heat on the garlic put in your chopped escarole and stir together. Put a lid on it and let the escarole cook down for about 10 Mins. Add cannellini beans with juice and diced tomatoes in juice. Salt & Pepper. When pasta is done, drain and mix into tomatoe and bean pan. Add salt & pepper to taste. ENJOY! Makes 8 8 Oz. servings
