Pepperoni Muffins

Introduction

Really savory muffin that smells like pizza
(recipe can easily be halved/quartered and freezes well

Number of Servings: 48

Ingredients

    8 cups flour (1/2 whole grain 1/2 white will work - all whole grain will not - consider the taste)
    4 tbs baking powder
    4 tsp salt
    4 cups buttermilk, lowfat
    8 large eggs
    1/2 cup parmesan cheese (not the crap in the green can - ever)
    6 ounces pepperoni, diced small
    4 tbs oregano, dried
    2 cups sun dried tomatoes, diced

Directions

Preheat oven to 400 degrees.

Spray muffin tins with baking spray (bakers joy is perfect)

mix dry ingredients.
Add in buttermilk and eggs and stir until mixed (don't overmix)
add the pepperoni and sun dried tomatoes.

Usig an ice cream scoop, add one scoop to each muffin tn an bake about 15 minutes til done.

Serve..

makes 48 muffins
