Introduction

Ingredients

    2 eggs, seperated
    2/3 cup unsweetened applesauce
    1 1/2 cup splenda
    1 cup mashed ripe bananas
    1 cup wheat flour
    1/2 cup all purpose flour
    1 tsp. baking soda
    1/4 cup 2% sour milk*
    1/2 tsp vanilla extract
    1/2 cup chopped walnuts

Directions

In a small mixing bowl, beat egg whites until soft peaks form; set aside. In a larger bowl, mix splenda and applesauce. Beat in egg yolks. Add the bananas, mix well. Combine flours and baking soda. Add to banana mixture, alternating with sour milk. Mix well after each addition. Add the vanilla. Fold in egg whites. Fold in nuts.
Bake at 350 for 45 to 50 minutes. Cool on a wire rack. (*To sour the milk add 1 teaspoon white vinegar to cup and add enough milk to equal 1/4 cup) 18 servings
