Key Lime Cheesecake Bars

Ingredients

6 squares honey graham crackers
2 tablespoons butter
1 teaspoon sugar
1 package sugar-free low calorie gelatin
3/4 cup of boiling water
1 16-ounce container fat-free cottage cheese
1 8-ounce package fat-free cream cheese
1 8-ounce container fat-free whipped dessert topping, thawed
Key limes or limes, for garnish (optional)
Directions
Finely crush graham crackers, combine with butter and sugar and press into bottom of 2-quart square baking dish. Refrigerate while preparing filling.
Combine gelatin and water in large bowl. Stir until gelatin is dissolved. Set aside.
Combine cottage cheese and cream cheese in blender or food processor, cover, and blend or process until smooth, scraping sides as needed. Whisk 1/2 cup of mixture into gelatin mixture, then remaining mixture until smooth. Fold in whipped topping. Spoon over chilled crumb crust.
Cover and refrigerate 8 to 24 hours or until filling is firm. Cut into squares and garnish with lime wedges, if desired. Makes 9 servings.
