Healthy Chicken Sausage

Introduction

Chicken sausage w/mango, basil and apple Chicken sausage w/mango, basil and apple
Number of Servings: 4

Ingredients

    2 chicken breasts
    2 small fresh apples (lightly chopped)
    1/2 fresh mango (lightly chopped)
    4T chopped basil
    4T parsley (flat and/or curly)
    white pepper
    salt
    garlic powder

Directions

makes 16-3 inch sausage like servings
Equipment needed:
Meat Grinder attachment for Kitchen Aid

Remove all the fat from the 2 breasts and cut into approx 1 inch cubes. Have all other ingredients chopped and prepared as noted in list.

Turn on grinder and insert some of the fresh fruit then add meat and proceed to alternate between the two until all have been processed. Once processed in the grinder add the seasonings and mix carefully.

At this point heat a non-stick skillet and either add a little oil or butter.

While that is heating form mixture into 3 inch sausage like forms. They will be wet so carefully move from surface to pan with a small spatula.

Place sausage into pan and brown on all sides. Do not be afraid of drying out the meat. There is so much moisture and flavor from the mango and apple that this will not be a worry.

Serve with a nice baby green saled topped with strawberries and feta cheese finshed with a light baslamic dressing.

    This was easy and quite healthy for the whole family. I like this because I knew there were not hormornes or nitrates in it and it was all white meat. My daughter loved it and ate everything. I served it with a nice spinach salad and quinoa. - 7/3/09
