IntroductionSmall little bites of goodness. Would be a lot healthier if you used whole wheat flour. I will try that next time. Got this recipe from the Splenda site and tweaked it a bit. 2 cups all purpose flour
2 tsp. baking powder
1/2 tsp. salt
3/4 cup Becel Light Margarine or any margarine that is at least 50% less calories
1/3 cup Splenda No Calorie Sweetner
1/3 cup Splenda Brown Sugar Blend
1 tsp. vanilla extract
3 medium bananas, mashed
1 large egg
1 (12 oz) pkg. Semi-Sweet Chocolate Chipa
Combine flour, baking powder and salt in medium bowl; set aside.
Combine margarine, Splenda, Splenda Brown Sugar Blend and vanilla in large bowl; beat at medium speed with mixer until creamy. Beat in bananas and egg. Gradually mix in flour mixture; stir in chocolate chips. Spoon batter into prepared pans, filling cups 2/3 full.
Bake for 20 minutes or until wooden pick inserted in center comes our clean. Cool l0 minutes in pan on wire rack. remove muffins from pans to wire rack to cool completely.
Makes 48 mini muffins.
