Light Linguine and Clam Sauce

Introduction

This is a light version of an Italian classic. This is a light version of an Italian classic.
Number of Servings: 8

Ingredients

    8 cloves garlic
    2 bunches scallions, about .75 C, white parts chopped (don't use the green parts)
    3 cans chopped clams
    red pepper flakes
    2 Tbsp olive oil
    2 bunches Italian parsley, cleaned and chopped (don't use the stems)
    .75 C water (you may also use white wine or clam sauce)
    1 pkg whole wheat linguine

Directions

1. Bring water to a boil in large pan and cook pasta until al dente, about 8 minutes while you're working on the steps below.
2.Sautee scallions and garlic with red pepper flakes in the olive oil until just soft over medium heat.
3. Add clams with juice from the cans and the water. Reduce heat to medium low. Cook for 5 minutes. Do not let mixture come to a boil. (You may use white wine or clam juice here. Just adjust the calorie and nutrient counts accordingly.)
4. Add parsley and reduce heat to low. Cover pan. You just want to wilt the parsley, not cook it.
5. Drain pasta and return to pan. Pour the clam sauce mixture over the pasta. Cover the pan and let sit for about 15 minutes.
6. Serve with freshly grated parmesan cheese.
