IntroductionThis is a great substitution for fried eggplant. Low on everything but taste! This is a great substitution for fried eggplant. Low on everything but taste!
1 1&1/2 lb eggplant
Ground black pepper
1/2 cup all-purpose flour
3 Tbsp EVOO
Sprinkle black pepper over the slices.
Spread the flour on a large plate.
Heat 1 Tbsp of EVOO in a large nonstick or heavy well-seasoned cast iron skillet.over med-hi heat.
Turn the slices over and pat to get rid of any excess.
Place the slices in the hot oil, in a single layer, and saute about 5 minutes on each side until they soften and turn golden brown. If t hey brown too quickly reduce the heat to medium. Add more oil as needed to keep the slices from sticking.
Drain on paper towels and serve immediately.
Repeat until you've used all the eggplant.
About 1 Tbsp of oil is required per batch.
