16 oz box whole wheat penne pasta
1 summer squash
2 portabella mushroom caps
2 tbsp. extra light olive oil
Slice veggies into even slices. Brush w/ olive oil & season to taste (seasoning not considered in nutritional content- i used kosher salt, pepper & granulated garlic). Grill veggies until done.
Chop veggies into bite size pieces & toss with pasta. Can serve with grated parm or feta cheese or with chicken.
