Introduction

Tastes great easy low in fat and calories LOW FAT LOW CAL GLUTEN FREE Tastes great easy low in fat and calories LOW FAT LOW CAL GLUTEN FREE
Number of Servings: 10

Ingredients

    12oz. or about 3 chicken breasts
    1c chopped onion
    Garlic powder to taste
    Red pepper to taste
    10 corn tortillias
    0.5c cream of chicken soup
    0.25c sour cream
    1c fat free chedder cheese
    cilantro
    0.5c 1% milk

Directions

boil chicken then shred into small peices, saute onion add to chicken season with garlic and pepper, Warm tortillias, Warm soup, sour cream and milk in sauce pan, fill tortillia's with chicken, sprinkle a little cheese and cilantro in each one. Pour sour cream sauce on top of all enchilada's and sprinkle with remaining cheese. Bake at 350 for 15 to 20 minutes.

  • This is my first attempt at making any kind of enchiladas and these were SO easy that this will definitely be made again. I added a can of Rotel to the meat and onions and instead of adding cilantro as a topping I chopped and added it to the whole mixture. YUMMM! - 1/18/14

    It's going into my recipe book. To be more hypo-allergenic, try some rice or buckwheat noodles and layer it like a lasagna. - 1/25/11
