Red Potatos & Green Bean Salad

Introduction

This is a great alternative to potato salad. You can serve warm or cold..I prefer warm. This is a great alternative to potato salad. You can serve warm or cold..I prefer warm.

Ingredients

    3lbs - Red Potatoes
    1lb - Fresh Green Beans (frozen will work to)
    1/3 c. Olive Oil
    2.5 Tbs White Wine Vinegar
    .25 Tsp Dill (dried)
    1 Tbs Dijon Mustard
    .5 Tsp Salt
    .5 Tsp Pepper

Directions

Wash and cut into desired pieces, boil along with green beans. Strain.

While potatos cooking, prepare dressing:
add olive oil, vinegar, dill, mustard, salt & pepper

Serves 6 - 306 calories
