Bountiful Beans

Introduction

A great and protein rich supper. I use dried pinto beans and soak them, the recipe actually calls for a 14 oz can, but I use a cup of dried beans. It also calls for a 1/2 jalepeno, but I dont miss it, I guess if you want, you can add it in. Recipe is from La Dolce Vegan by Sarah Kramer. I love this book. This is great over rice--not added in. Ingredients

    1 samll onion, chopped
    1 celery stalk, chopped
    1 small green pepper, chopped
    1 TBSP olive oil
    1 garlic clove
    1/2 tsp chili powder
    1/2 tsp cumin, ground
    1/4 tsp salt
    1/4 tsp black pepper
    1 large tomato, chopped
    1 14 oz can of pinto beans, drained and rinsed
    or 1 cup dry before soak
    1/2 cup vegetable stock
    1/4 cup cilantro, fresh and minced

Directions

In a large saucepan on medium high heat, saute the onions, celery, green peppers, and jalapenos ( if used) in oil until onions are transluscent. Add garlic, chili powder, cumin, salt, and pepper; saute for additional 1-2 minutes. Add tomatos, beans, and stock. Bring to a boil, then reduce heat and simmer for 10-15 minutes. Serve over rice or pasta of your choice. Makes 2 large or 4 small servings.
