Exotic Tomato & Legume Salad

Introduction

This is nutritious, healthy and delicious! You can substitute ingredients to your heart's content. I use red onions and white wine vinegar instead of lime juice. Ingredients

    Tomatoes and/or Cucumbers
    Beans - Canned (any kind )
    Chickpeas - Canned
    Hearts of Palm - Canned (Sliced)
    Artichoke Hearts - Canned (2 pieces for 1 serving)
    Red onions (or white)
    Black Olives - Sliced (if canned, use the ones canned in water)
    Extra Virgin Olive Oil
    Lime Juice
    Herbs to taste to add to dressing
    Salt & pepper to taste


Directions

Just chop all ingredients to bite size pieces. For the dressing, combine the olive oil and lime juice or white wine vinegar (DO NOT ADD SUGAR!). You can play with the proportions, depending on the size of the salad., but be aware that olive oil, while very healthy has a LOT of calories! I like my dressing extremely vinagrey! Add the dressing to the salad and toss well. Enjoy!
