Introduction

This can be made healthier in several ways such as using chicken breasts instead of dark meat or salt free tomatoes and leave out the capers. This was my Mom's basic recipe except she used a skinned whole chicken instead of only the dark meat pieces. Almost everything is subject to changing quantities to the cook's preferences and it still tastes good. Number of Servings: 4

Ingredients

    Chicken Thigh, 4 thigh, skin removed
    Chicken Leg, 4 leg, skin removed
    Onions, raw, 1 cup, chopped
    Garlic, 2 cloves, chopped
    Canned Tomatoes, 4 cups
    Bay Leaf, 1or 2 to taste
    Thyme, ground, 0.5 tsp
    Oregano, ground, 0.25 tsp
    Jalapeno Peppers, 0.25 cup, sliced (can also use serrano peppers)
    Capers, canned, 2 tbsp, drained
    Black Olives, 1 can any size olives
    White Wine, 4 fl oz - optional and the alcohol cooks off

Directions

In a non-stick pan, lightly brown the chicken.

Remove the chicken and cook the onions in the remaining juices until slightly transparent.

Add all the of the ingredients and cover.

Cook over low heat.

Stir periodically and remove from heat when the chicken is cooked through (about an hour).

Makes 4 servings - 1 thigh, 1 leg, and a little more than a cup of tomato mixture with 16 black olives each.
