Shrimp & Pasta Salad - no cheese

Introduction

HUGE quantity of pasta salad, recipe could easily be halved. I usually have to use two bowls to do the mixing because it overflows even my largest bowl. But even with only 4 of us, this never lasts long. Perfect meal for summer. HUGE quantity of pasta salad, recipe could easily be halved. Number of Servings: 20

Ingredients

    24 oz box of pasta shells (or other salad pasta)
    1 pint of grape tomatoes
    200 g of carrots (about 1 cup diced)
    160 g of celery (5 or 6 stalks)
    1 yellow pepper
    7 green onions
    8 oz dilled havarti cheese
    9 oz salad shrimp
    1 c light mayonnaise (calculated with Best Foods)
    salt, pepper & cilantro to taste

Directions

Dice or slice all the veggies; cut the cheese in small cubes; add the rinsed shrimp & the cooked, rinsed and cooled pasta, add chopped cilantro as desired. Mix. Season with salt & pepper; add the mayonnaise and mix again. Chill for at least an hour for the flavors to blend. Makes 20 (yes, 20) 1 cup servings.
