Introduction

Number of Servings: 8

Ingredients

    1 large eggplant, sliced
    1 jar tomato sauce (equiv 4 cups)
    1 clove garlic (minced)
    5 fresh basil leaves
    1 lb extr lean ground beef (or turkey)
    5 tbsp light olive oil (divided, 2 & 3)
    8 tsps reduced fat parmesan cheesse (divided; 4 parts of 2 tsps)

Directions

In large pot, heat 2 tbsp olive oil, add garlic & basil leaves. When garlic is browned, add ground beef, cook till no longer pink & then add tomato sauce. Mean while, on large skillet, fry eggplant slices in remaining olive oil. Drain oil from cooked slices. In 8 X 8 baking dish, spoon layer of sauce, then layer with eggplant, then with 2 tsp of parmesan cheese. Repeat till dish is full, top with sauce. Bake in oven at 350 for about 10 minutes or till it starts to bubble.
