Uses whole oat flour and seven-grain cereal to increase fiber, applesauce to decrease fat content. Needs to improve texture--possibly by increasing oat/seven-grain cereals and decreasing flour content. Original recipe called for 1/2 C prune puree, which could improve texture as well. Ingredients

2 Large Eggs
1/2 Tsp Salt
15 oz (1 3/4 C) Unsweetened Applesauce
1 Tsp Baking Soda
1/4 C Molasses
2/3 C Quick Oats
2 1/3 C Seven-Grain Cereal
1 C Enriched, All-Purpose Wheat Flour
1 1/2 C Whole Oat Flour
1/2 C Dried Cranberries
1/2 C Raisins
1/2 C Dried Cherries
1/2 C Plain, Nonfat Yogurt
1 Tsp Vanilla Extract
Directions
Preheat oven to 350 degrees. Grease cookie sheets with non-stick cooking spray. Mix together wet and dry ingredients. If the mixture is too wet, add more oats. Place each tablespoon of batter onto greased cookie sheet. May need to press into cookie shape. Bake for 10-15 minutes. Makes 6-dozen 1-Tbs cookies.
