1 lb chopped beef
1 whole green bell pepper chopped
1/2 cup chopped onion
1 15 oz can Kidney beans
1 15 oz can chili beans
1 14.5 oz can diced tomatoes
2 TBS olive oil
2) Add beans and tomoates to pan and bring to a boil. Add additional chili powder (if desired).
3) Once boiling reduce heat and simmer for about 10-15 minutes. Serve over rice or noodles topped with a little bit of cheddar cheese.
Makes about 6 1 cup servings.
