WW Risotto

Ingredients

    * Barley, pearled, .5 cup
    * Chicken Broth, 2 cup
    * Green Beans (snap), 5 oz
    * Olive Oil, 1 1tsp
    * Onions, raw, 1 cup, chopped
    *Green onion about .25 c
    Salt and pepper to taste
    Parmesan Cheese 1 tble


Directions

Cook Onions in oil until tender, add uncooked barley stir around for a 1min. Next add the broth and cover and simmer for about 8 minutes. Add the green beans (cut into 2 inches) and cover again. Let steam for about 2-3 more minutes. Remove from heat and mix in salt, pepper, green onions to taste. Add cheese and serve!
