Sausage and Rice mini meal

Introduction

Quick meal that we made into mini meals. Freezes well for quick grab and go or last minute meals. This is a meal you can vary with additonal veggies. Quick meal that we made into mini meals. Freezes well for quick grab and go or last minute meals. This is a meal you can vary with additonal veggies.
Number of Servings: 11

Ingredients

    1 lb turkey sausage
    1 onion
    1/2 green pepper
    2 scallions
    1/2 c chopped mushrooms
    3 garlic cloves
    2 bouillion packets
    4 c water
    4 c minute rice

    *chicken broth may be substituted

Directions

Brown turkey sausage in large skillet.
Add chopped onion, pepper, scallions, mushrooms and garlic. Cook about 2 minutes.
Mix 2 bouillon packets with 4 cups of water. (Or use 4 cups of broth of choice). Pour into skillet.
Add in 4 cups of brown (or white) rice. Stir.
Bring to boil. Cover, and cook on low for 20 minutes or until rice is done.

Separate into 11 individual serving sizes and refrigerate or freeze for easy mini meal dining.
