Mediterranean Tuna Salad

Introduction

Number of Servings: 8

Ingredients

    Bulgur, 1.25 cup dried
    Olive Oil, 3 tsp
    Oregano, ground, 1 tsp

    Tuna, Canned in Water, drained, 10 oz
    Feta Cheese, crumbled, 4 oz
    Black Olives, canned , drained 1/2 cup
    Cucumber (with peel), 2.5 cup diced
    Zest of 1 small lemon OR 1 packet of True Lemon

    Lemon juice
    Salt & Pepper
    Mint, 1/2-1 tsp dried or 1 T. fresh (optional)
    Cherry Tomatoes, halved, 1 cup (optional)
    Lettuce leaves for serving (optional)

Directions

Place olive oil in a small bowl and pour in oregano. Set aside.
Heat 3 cups of water to boiling in a medium saucepan or dutch oven. Pour in Bulgur, stir once, turn heat down, cover and simmer until tender, about 20 minutes. Once done drain and rinse with cool water.
While bulgur is cooking combine tuna, feta, olives, cucumbers, zest, and tomatoes if using. When bulgur is cooled stir it in along with the oregano & oil. Add about 1 T. of lemon juice if needed (more or less to taste), salt and pepper to taste, and mint if desired.
Great served on a bed of lettuce leaves.
