Introduction

Number of Servings: 4

Ingredients

    .5 teaspoon canola or olive oil
    4 cloves of garlic, sliced
    1 cup chopped onion
    1 cup carrots, chopped as sticks
    1 cup sliced zucchini
    2 cups sliced mushrooms
    1 cup fresh peas
    1 tsp. dried basil
    1 tsp dried oregano
    salt and pepper to taste

Directions

It is very important to use a good saute pan that distributes heat evenly and has a non-stick surface.

Saute onions and garlic in the oil. Add carrots and cook over medium low heat until the vegetables begin to soften, stirring as needed. Add the zucchini, mushrooms, tomato sauce, and spices and heat until bubbly. Cover and cook for 10 minutes and then add the peas and continue cooking until the vegetables are tender.

Makes 4 servings - one cup each. This is delicious as a side dish on its own or served over whole grain pasta.
