Mini Protein Donuts

Number of Servings: 10

Ingredients

    1 cup Almond Flour (aka Almond Meal) (Kroger has in the Organic Section for about $10 per bag or >>>> make your own)
    1/2 cup Chocolate Protein Powder
    1/2 cup Multigrain Pancake Mix (Kroger has in organic section or I also use Heart Smart Bisquick)

    1 teaspoon Baking Powder
    1/2 teaspoon Cinnamon
    2 Tablespoons Unsweetened Cocoa
    1 Egg, beaten
    3 Tablespoons Sugar Free Torani or Divinci Syrup (I used the SF Divinci Kaluha for an extra kick of chocolate)
    1 Tablespoon Canola Oil
    1/4 cup Water

Directions

Preheat oven to 325. Mix all ingredients till well combined. Spray Mini Donut Pan with Pam. Fill 1/2 full with batter (batter is the consistency of brownie batter). Bake 8 minutes. Remove from pan and cool on wire rack - makes 10 muffins or 18 mini donuts!

Glaze with 1/2 sugar free chocolate bar mixed wiht 1 teaspoon of skim or soy milk, 1 teaspoon of Torani syrup.

Want toppings: add chopped nuts or crumbled sugar free cookies.
