    1 TSP DRY MUSTARD
    1/2 TSP CAYENNE PEPPER
    1/2 TSP CUMIN
    1/2 TSP BLACK PEPPER
    1/2 TSP THYME

    4 TBL MARGARINE
    2 CUPS DICED SMOKED HAM
    1.5 CUPS DICED TURKEY KIELBASA
    1.5 CUPS ONION, DICED
    1.5 CUPS CELERY, DICED
    1 CUP BELL PEPPER, DICED
    1.5 TSP MINCED GARLIC
    2.5 CUPS UNCOOKED RICE
    4.5 CUPS CHICKEN STOCK

Directions

THOROUGHLY COMBINE THE SEASONING MIX INGREDIENTS I A SMALL BOWL AND SET ASIDE.

IN A LARGE HEAVY SKILLET MELT THE MARGARINE OVER HIGH HEAT. ADD MEATS, COOK FIVE MINUTES, STIRRING OCCASIONALLY. ADD THE ONION, CELERY, ELL PEPPER, SEASONING MIX AND GARLIC. STIR WELL AND CONTINUE COOKING UNTIL BROWNED, ABOUT 10 TO 12 MINUTES, STIRRING OCCASIONALLY AND SCRAPING THE PAN BOTTOM WELL. STIR IN THE RICE AND COOK FIVE MINUTES, STIRRING AND SCRAPING PAN BOTTOM. ADD STOCK, STIR WELL, BRING TO A BOIL. REDUCE HEAT AND SIMMER UNTIL RICE IS TENDER BUT STILL A BIG CRUNCHY, ABOUT 20 MINUTES, STIRRING OCCASIONALLY TOWARD THE END. TURN OFF HEAT AND ADD SHRIMP, STIR, COVER AND SERVE IN 10 MINUTES.
