Unshished Chicken Kabobs

Introduction

Kabobs without the fuss. Cooked on the grill or broiled indoors any time of the year. Fast and easy. A complete meal in minutes. Can be marinated overnight if desired. Also works well with Shrimp. Ingredients

    12 ounces chicken breasts, no skin cut into 1 1/2 inch cubes

    1/4 teaspoon grill seasoning (not included)
    1/2 lemon zested and juiced
    2 teaspoons red wine vinegar
    1 teaspoon dried oregano
    1 clove garlic, minced
    2 teaspoons olive oil

    1 green bell peppers, seeded and cut into 1 1/2" pieces
    1/2 large yellow onion, cut into 1 1/2" pieces
    8 oz mushrooms whole
    1 zucchini sliced 1/4" thick
    1 cup grape tomatoes

    Salt and pepper to taste

    In a bowl add grill seasoning, garlic, lemon zest, lemon juice, vinegar and whisk in oil. Add chicken and toss to coat. Set aside.

    Prepare vegetables and spray with non-stick spray. Season with salt and pepper to taste. Set aside

    Place chicken cubes onto broiler pan sprayed with non-stick spray and broil 5-7 minutes turn chicken over and add vegetables to another part of the broiler pan and continue to broil 5-7 minutes. Add grape tomatoes and continue to cook until skins begin to burst on tomatoes.

    Transfer vegetables to a plate Add chicken on top. Serve with 1/2 cup brown rice.

    Makes two servings.
