Dulce de Leche Sandwich Cookies

Introduction

I first enjoyed Dulce de Leche, an almost caramelized sweet milk treat, in Portugal but had trouble finding a healthy version. Thanks to SPLENDA here it is for you. Ingredients

    Dulce de Leche:
    1 1/2 cups unsweetened soy milk
    1/4 cup SPLENDA Brown Sugar Blend
    1/2 cup SPLENDA No-Cal. Granulated Sweetner
    1 Tbsp vanilla extract
    1/4 tsp baking powder

    Cookie:
    3/4 cup all-purpose flour
    1 tsp ground cinnamon
    1 cup SPLENDA No-Cal. Granulated Sweetner
    1/4 cup SPLENDA Brown Sugar Blend
    1/4 cup Reduced Cal Margarine Spread
    2 Tbsp unsweetened soy milk

Directions

Preping the Dulce de Leche:
1. Heat soy milk over medium heat until it comes to a simmer.
2. Whisk in all other ingredients. Continue to simmer for approx. 30 minutes or until a caramel consistency.
3. Remove from heat and set aside. Check periodically to make sure the caramel stays warm.


Preping the cookie:
1. Pre-heat oven to 375 degrees F. Line a cookie sheet with parchment or a silicon baking mat liner.
2. Sift flour and cinnamon into a medium sized mixing bowl. Mix in both SPLENDAs. (This is a great step for the kids to do.)
3. Crumble margarine into flour mix. Add soy milk and mix until batter forms a dough.
4. Roll out your dough on to a floured surface to an 1/8 inch thickness. Cut the dough into shapes and circles. No wider than 2 inches across.
5. Place shapes onto the UNGREASED lined cookie sheet.
6. Bake for approx. 20 or until lightly golden brown at the edges. TRY to keep the kids away from the cookie while they cool, 4 mins. or so.
7. Spread each cookie with a dollop of Dulce de Leche and top with a second cookie, OREO style, or grind up six to eight cookies and sprinkle over the top.
(For fancy dinners best served warm.)
