Hearty Summer Pak-Choi Soup

Introduction

Ingredients

    *1 box low sodium natural chicken broth (or 3.5 cups of your own broth)
    *14 oz. can diced tomatoes
    *14 oz. can cannellini or other white beans, drained and rinsed.
    *1 head pak-choi, rinsed and roughly chopped
    *2 baby onions
    *2 garlic flowers (or one clove garlic)
    *2 tbsp. fresh chives, diced
    *salt to taste
    *pepper to taste
    *sprinkle of coriander
    *sprinkle of dried thyme
    *a few threads of saffron
    *2 sprigs fresh oregano, diced
    *1/2 cup cooked quinoa

Directions

Makes 4 generous servings

In a stockpot, saute the baby onions and garlic in a small amount of oil or bacon fat (less than a tbsp.) until fragrant.
Add the broth, tomatoes, and beans and allow the soup to come to a boil.
Add the greens and turn the heat down to a simmer.
Allow the greens to wilt, and then add the seasonings, herbs and spices.
Cover and heat just enough to simmer gently for 45 minutes to an hour. Stir in the cooked quinoa and serve immediately or freeze for up to a month.
