Introduction

This was made for my birthday from one of the waitresses I work with. It is really good and is different with out using eggs or butter. This was made for my birthday from one of the waitresses I work with. It is really good and is different with out using eggs or butter.
Number of Servings: 12

Ingredients

    1/2 cup whole wheat flour
    1/2 cup white flour
    1/2 teaspoon baking powder
    1/4 cup Sugar or sugar substitute
    1/4 cup unmixed instant coffee
    1/2 cup canola oil
    1/2 cup maple syrup, light
    1/4 cup original soy milk
    2 teaspoons vanilla
    2 tablespoons tahini
    1 tablespoon light peanut butter
    1/2 teaspoon salt

Directions

Preheat oven to 350 and oil 9x9. Mix the dry ingredients including coffee, set aside. Whisk together wet ingredients, oil, syrup, milk, vanilla, tahini, peanut butter and salt. Add liquid to dry just until the dry is completely moistened. Pour batter into pan and make sure it is evenly spread. Cook on center rack for 20 minutes or until toothpick comes out clean. Makes 10-12 pieces.
