Introduction

I keep trying to tweak these cookies to be healthier and reduce the sugar! These are the best tasting yet and have the shortening replaced with coconut oil which is so good for the digestive system! Number of Servings: 42

Ingredients

    1/ 2 cup butter, salted
    1/4 c. coconut oil
    1/2 c. honey
    1/2 cup natural unrefined sugar
    1 egg
    1 tsp. vanilla
    3 c. oats
    1 c. organic unbleached flour
    1 tsp. salt
    1/2 tsp. soda
    1/2 cup unsweetened coconut
    1/2 cup dates, chopped finely
    1/2 cup raisins
    1 tsp. cinnamon


Directions

Preheat oven to 350 degrees. Beat together butter, coconut oil, sugar, honey, egg and vanilla until creamy. Add dry ingredients; mix well. Drop by rounded spoonfuls onto greased baking sheet. Bake for 8-10 minutes or until golden brown. (I like my cookies to come out of the oven slightly underbaked so they're chewy on the inside.) Makes about 3-4 dozen
